Pick Taksim & Beyoğlu if you're returning, staying longer, or want evenings — İstiklal's energy, Karaköy's galleries and food, and bigger, newer hotels for the money.
Sultanahmet: the postcard at your door
The old city's formula is small historic buildings with killer terraces. Sura Hagia Sophia (8.8 from a massive 8,600 verified stays) even fits a pool and botanic garden beside its namesake; Catch Sultanahmet (9.2) joins eight Ottoman houses into one hotel; Seven Hills Palace serves the terrace view every guidebook photographs. Taksim & Beyoğlu: the city that stays up
Across the Horn the buildings grow and the nights lengthen. Pera Palace (9.2 from 4,000 stays) is the 1892 legend — Agatha Christie's hotel, with Atatürk's room-museum upstairs. Richmond sits directly on İstiklal Avenue; The Bank Hotel turned a Bankalar Caddesi bank into Karaköy's design flagship; Akka Suites (9.0) solves İstiklal's noise with soundproofed suites. Rooms here are larger and rates friendlier like-for-like — you're paying for location differently: transit to the sights (the tram and funicular do it in 20–25 minutes), doorstep everything else.
The practical math
Two or three nights, first visit, museum-heavy plans: Sultanahmet — the dawn and dusk hours beside the monuments, before the day-trippers arrive, are the whole point. Four nights or more, second visit, food-and-nightlife plans: Beyoğlu wins on space, kitchens and energy. Many travellers split the stay; İstanbul rewards it.
Our verdict
There's no wrong bank of the Horn, only a wrong match. Use the guest videos below the same way we do: a Sultanahmet rooftop breakfast and an İstiklal balcony at midnight are fifteen minutes and a whole world apart — the footage makes the choice faster than any list of pros and cons.
